Pani Puri
Ingredients:
1 cup fresh mint leaves
½ cup fresh coriander leaves
1-inch piece of ginger
1-2 green chilies
1 tsp cumin powder
1 tsp chaat masala
1 tsp black salt
4 cups cold water
Preparation:
1. Blend mint, coriander, ginger, and green chilies with a little water to form a smooth paste.
2. Add the paste to a large bowl of cold water.
3. Mix in cumin powder, chaat masala, and black salt. Stir well and refrigerate.
The Filling
Ingredients:
2 medium potatoes, boiled and mashed
1 cup chickpeas, boiled
¼ cup finely chopped red onion
Salt to taste
Preparation:
1. Combine mashed potatoes, chickpeas, and chopped onion in a bowl.
2. Season with a pinch of salt and mix well.
Assembly
You will also need:
20-25 ready-made puris (crispy shells)
Sweet tamarind chutney (store-bought or homemade)
1. Crack a small hole in the top of a puri.
2. Spoon a little of the filling into the puri.
3. Add a small amount of sweet tamarind chutney.
4. Dip the entire puri into the spicy pani and serve immediately. Enjoy!
