Eggless Tutti Frutti Cake
Ingredients
• 2 cups (250g) all-purpose flour
• 1 cup (200g) granulated sugar
• 1 cup (240ml) yogurt (plain, unsweetened)
• ½ cup (120ml) vegetable oil (or melted butter)
• ½ cup (120ml) milk (room temperature)
• 1 cup (150g) tutti frutti (candied fruits)
• 2 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 2 tsp vanilla extract
• 1 tbsp flour (for tossing tutti frutti, prevents sinking)
Instructions
Preheat oven to 175°C (350°F). Grease and line an 8-inch round cake pan. In a mixing bowl, whisk yogurt and sugar until smooth. Add oil, milk, and vanilla extract, mixing well. In another bowl, sift together flour, baking powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Toss the tutti frutti pieces with 1 tablespoon of flour, then fold them into the batter. Pour batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Let cool before slicing.
