Hot Cross Buns Recipe
Ingredients
For the dough
• 4 cups (500g) all-purpose flour
• ¼ cup (50g) sugar
• 1 packet (7g / 2¼ tsp) instant yeast
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ground allspice (optional)
• 1 tsp salt
• 1 cup (240ml) warm milk
• ¼ cup (60g) unsalted butter, melted
• 1 large egg
• ¾ cup (120g) raisins or currants
For the crosses
• ½ cup (65g) all-purpose flour
• 5–6 tbsp water (to form a thick paste)
For the glaze
• 2 tbsp apricot jam or honey, warmed
Instructions
In a large bowl, mix flour, sugar, yeast, spices, and salt.
Add warm milk, melted butter, and egg. Mix until a sticky dough forms.
Knead the dough on a floured surface for 8–10 minutes until smooth and elastic, or use a stand mixer with a dough hook for 5 minutes.
Work in the raisins until evenly distributed.
Place dough in a greased bowl, cover, and let rise for 1–1½ hours, or until doubled in size.
Punch down the dough and divide into 12 even pieces. Shape each into a ball and arrange on a greased or parchment-lined baking tray, close together but not touching.
Cover and let rise again for 30–40 minutes until puffy.
Preheat oven to 180°C (350°F).
Mix flour and water for the cross paste, then pipe over the buns to form crosses.
Bake for 20–25 minutes, until golden brown.
Brush warm buns with apricot jam or honey for a shiny glaze.
