Garlic Chicken with Broccoli and Spinach
Ingredients:
2 cups chicken breast, cubed
1 cup broccoli florets
1 cup spinach leaves
1/4 cup olive oil
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1 tbsp garlic, minced
Salt & pepper to taste
Optional: pinch of red pepper flakes for heat
Instructions:
1. Prepare the chicken
Season cubed chicken with salt and pepper.
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
Cook chicken until golden brown and fully cooked (about 6–8 minutes). Remove and set aside.
2. Cook the veggies
In the same skillet, add remaining olive oil.
Sauté garlic until fragrant (about 30 seconds).
Add broccoli florets and chicken broth. Cover and cook for 3–4 minutes until broccoli is tender-crisp.
3. Combine
Add spinach leaves, stirring until just wilted.
Return chicken to the skillet, toss everything together.
4. Finish with cheese
Sprinkle in grated Parmesan and mix well until slightly creamy.
5. Serve hot
Enjoy as-is, or pair with rice, pasta, or quinoa for a full meal.
