🍪 Healthy Nut & Seed Energy Cookies

Ingredients:
1 ½ cups rolled oats
½ cup natural peanut butter (or almond butter)
¼ cup honey or maple syrup (use maple syrup for vegan)
1 ripe banana, mashed (binder & natural sweetness)
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup dried cranberries or raisins
¼ cup almonds, roughly chopped
¼ cup peanuts or cashews, chopped
½ tsp ground cinnamon
1 tsp vanilla extract
Pinch of salt
Instructions:
1. Prep the oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix wet ingredients: In a large bowl, combine mashed banana, peanut butter, honey/maple syrup, and vanilla until smooth.
3. Add dry ingredients: Stir in oats, cinnamon, and salt. Mix until well combined.
4. Fold in nuts & fruits: Add pumpkin seeds, sunflower seeds, cranberries/raisins, almonds, and peanuts/cashews. Mix evenly.
5. Shape cookies: Scoop about 2 tbsp of mixture, form into a ball, and flatten gently into cookie shapes on the baking sheet.
6. Bake: Place in oven for 12–15 minutes, until edges are golden brown.
7. Cool & enjoy: Let cookies cool on the tray for 5 minutes, then transfer to a wire rack.
