Ingredients
For the Puff Pastry

1 sheet puff pastry (about 10×12 in / 25×30 cm), thawed if frozen

2 tbsp powdered sugar (for dusting)

For the Cream Filling

1 cup (240 ml) heavy whipping cream, cold

8 oz (225 g) mascarpone cheese (or cream cheese for tangier flavor)

¼ cup (50 g) granulated sugar

1 tsp vanilla extract

(Option: Use pastry cream — 2 cups if you prefer the classic style)

For Assembly

Fresh berries (blackberries, red currants, raspberries, blueberries — your choice)

Crushed pistachios or nuts (optional)

Mint leaves (for garnish)

Instructions
1️⃣ Bake the Puff Pastry

Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

Cut puff pastry sheet into three equal rectangles. Place them flat on the tray.

Prick each sheet all over with a fork (prevents puffing). Cover with another parchment sheet and place a second tray on top (keeps them flat).

Bake 15–18 min until golden and crisp. Cool completely. Dust with powdered sugar if you like and caramelize lightly with a kitchen torch (optional for extra crispness).

2️⃣ Make the Cream Filling

Beat cold heavy cream until soft peaks form.

In another bowl, whisk mascarpone, sugar, and vanilla until smooth.

Gently fold whipped cream into mascarpone mixture until fluffy.

(If using pastry cream, prepare in advance and chill until firm.)

3️⃣ Assemble

Place one baked pastry sheet on a serving plate. Pipe or spread an even layer of cream. Add berries.

Top with another pastry layer and repeat cream + berries.

Add the final pastry layer. Decorate with cream rosettes, berries, mint, and chopped pistachios.

✨ Tips

For ultra-crisp pastry, bake an extra few minutes uncovered after removing the top tray.

Chill assembled mille-feuille for at least 1 hour before slicing; this helps it set.

Slice with a sharp serrated knife for clean edges.
