Ingredients :
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 inch ginger, grated
- 1 cup chicken broth
- 1/2 cup ramen broth
- 1/4 cup soy sauce
- 2 tbsp sriracha (or , to taste)
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp heavy cream
- 2 tbsp butter
- 1/4 cup chopped scallions
- 8 oz ramen noodles
- 1/2 cup chopped cilantro
- Salt and pepper to taste

Directions :
1. In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.

2. Add onion, garlic, and bell pepper to the skillet and sauté until softened, about 3-5 minutes. Stir in ginger and cook for another minute.

3. Pour in chicken broth and ramen broth. Bring to a simmer.

4. Add soy sauce, sriracha, and sesame oil. Stir to combine. Return the chicken to the skillet.

5. In a small bowl, whisk together cornstarch and a little cold water to form a smooth slurry. Add the slurry to the skillet and cook, stirring constantly, until the sauce thickens.

6. Stir in heavy cream and butter until melted and combined with the sauce. Season with salt and pepper to taste.

7. Cook ramen noodles according to package directions. Drain and add to the skillet with the chicken and sauce. Toss to coat.

8. Garnish with chopped scallions and cilantro. Serve immediately.
