For the Bake:
2 cups cooked shredded chicken (rotisserie works great)
1 can (15 oz) sweet corn, drained
1 cup frozen corn (for texture)
1 small red bell pepper, diced
1 small green bell pepper, diced
1 small red onion, finely chopped
1½ cups cooked rice (white or brown)
1 cup sour cream
½ cup mayonnaise
1½ cups shredded cheddar cheese (divided)
1 tsp Cajun seasoning
½ tsp smoked paprika
Salt & pepper to taste
1 tbsp chopped parsley (optional garnish)
For the Cheddar Crust Topping:
1 cup crushed Ritz crackers or buttery breadcrumbs
½ cup shredded cheddar cheese
2 tbsp melted butter
Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large mixing bowl, combine shredded chicken, canned and frozen corn, diced bell peppers, red onion, cooked rice, sour cream, mayonnaise, 1 cup cheddar cheese, Cajun seasoning, smoked paprika, salt, and pepper. Mix until well combined.
Spread the mixture evenly into the prepared baking dish.
In a small bowl, combine crushed Ritz crackers (or breadcrumbs), ½ cup shredded cheddar, and melted butter. Sprinkle evenly over the top of the casserole.
Bake uncovered for 25–30 minutes, or until the top is golden and bubbly.
Remove from oven and let rest for 5 minutes. Garnish with chopped parsley if desired.
