4 large bell peppers, halved and seeded
2 cups cooked shredded chicken
1 can white beans, rinsed
1/2 cup corn
1 cup mild salsa verde
1/2 tsp cumin and pinch chili powder
1 cup cottage cheese
1/4 cup low sodium chicken broth
1/2 cup shredded Monterey Jack
Salt and black pepper
Methods:
Heat oven to 400 F and place pepper halves in a baking dish cut side up.
Stir chicken, beans, corn, salsa verde, cumin, chili powder, salt, and pepper.
Pack filling tightly into peppers to the rim.
Blend cottage cheese with broth and a pinch of salt into a smooth queso.
Spoon queso over filled peppers and top with Monterey Jack.
Bake 22 to 26 minutes until peppers are tender and tops are bubbling.
Rest 5 minutes so fillings set for clean slices.
Finish with chopped cilantro and lime if you like.
