Ingredients (serves 2–3): • 2 white fish fillets (cod, halibut, or sea bass, ~6 oz each) • Salt & black pepper • 1 tbsp olive oil • 1 garlic clove, thinly sliced • 1 cup cherry tomatoes, halved • ¼ cup pitted Kalamata olives, halved • 1 lemon, thinly sliced • ½ tsp dried oregano or thyme • Fresh parsley, for garnish

Instructions: 1. Preheat oven: 400°F (200°C). Lightly oil a baking dish. 2. Assemble: Place fish fillets in the dish. Season with salt and pepper. Scatter tomatoes, olives, garlic, and lemon slices on top. Drizzle with olive oil and sprinkle with oregano. 3. Bake: Bake uncovered for 15–18 minutes or until fish flakes easily with a fork. 4. Serve: Garnish with fresh parsley and a final drizzle of olive oil. Serve with crusty bread, rice, or a simple green salad.
