Ingredients (serves 4):
For the ribs: • 2 racks baby back ribs (about 3–4 lbs total) • 2 tbsp brown sugar • 2 tsp smoked paprika • 1 tsp garlic powder • 1 tsp onion powder • ½ tsp black pepper • 1 tsp salt
For the honey bourbon BBQ sauce: • 1 cup (240ml) BBQ sauce (your favorite base) • ¼ cup (60ml) bourbon • 3 tbsp honey • 2 tbsp apple cider vinegar • 1 tbsp Dijon mustard • ½ tsp chili flakes (optional) • Salt & pepper to taste

Instructions: 1. Prep the ribs: Remove the silver skin from the back of the ribs. Mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub all over the ribs. 2. Bake low & slow: Wrap each rack in foil and bake at 300°F (150°C) for 2.5–3 hours until tender. 3. Make the sauce: While ribs bake, simmer BBQ sauce, bourbon, honey, vinegar, mustard, and chili flakes in a saucepan until slightly thickened (10–15 minutes). Set aside. 4. Finish: Remove ribs from foil, brush with sauce. Broil or grill for 5–7 minutes, brushing more sauce until caramelized and glossy. 5. Serve: Slice between the bones, pile onto a platter, and serve with extra sauce.
