Ingredients (serves 4–6) • 6 bone-in, skin-on chicken thighs • 2 Tbsp olive oil • For the glaze • ¼ cup honey • 3 Tbsp fresh lime juice (about 2 limes) • 1 Tbsp soy sauce • 2 garlic cloves, minced • 1 tsp smoked paprika • ½ tsp salt • ¼ tsp black pepper • Lime wedges & chopped cilantro, for serving

Instructions 1. Mix the glaze – Whisk honey, lime juice, soy sauce, garlic, paprika, salt, and pepper. 2. Sear the chicken – Heat olive oil in an oven-safe skillet over medium-high. Pat thighs dry, place skin-side down, and sear 4–5 min until deep golden; flip and cook 2 min more. 3. Glaze & roast – Pour half the honey-lime mixture over the chicken, turning to coat. Transfer skillet to a 400 °F / 200 °C oven; roast 18–20 min, brushing with remaining glaze halfway, until internal temp reaches 165 °F / 74 °C. 4. Finish – Spoon pan sauce over the thighs, sprinkle with cilantro, and serve with fresh lime wedges.
