Ingredients (serves 3–4):
For the chicken: • 1 lb (450g) boneless chicken thighs or breast, cut into bite-sized pieces • ½ cup cornstarch • Salt & pepper • Oil for frying (vegetable or avocado)
For the sauce: • ¼ cup soy sauce • 2 tbsp honey • 1 tbsp rice vinegar • 1 tbsp toasted sesame oil • 1 tbsp brown sugar • 1 garlic clove, grated • 1 tsp grated ginger • 1 tsp cornstarch mixed with 1 tbsp water (slurry)
To finish: • ¼ cup toasted cashews • 2 scallions, thinly sliced • 1 tsp sesame seeds (white or black)

Instructions: 1. Fry the chicken: Toss chicken in cornstarch, salt, and pepper. Fry in hot oil until golden and crisp. Drain on paper towels. 2. Make the sauce: In a small pan, combine all sauce ingredients (except slurry). Bring to a simmer, then stir in the slurry. Cook until thickened. 3. Combine: Toss crispy chicken in the hot sauce until coated. 4. Serve: Top with scallions, sesame seeds, and toasted cashews. Serve over rice or noodles.
