Ingredients (serves 4–6):
For the whipped feta:
• 8 oz (225g) feta cheese
• 3 oz (85g) cream cheese
• 2 tbsp olive oil
• 1 tbsp lemon juice
• 1 garlic clove, grated
• Black pepper, to taste
For the roasted grapes:
• 1 ½ cups red or black seedless grapes
• 1 tsp olive oil
• 2–3 sprigs fresh thyme
• Pinch of sea salt
To serve:
• Warm flatbread, crostini, or crackers
• Optional: chopped walnuts or pistachios for texture

Instructions:
1. Roast the grapes: Preheat oven to 425°F (220°C). Toss grapes with olive oil, thyme, and a pinch of salt. Roast on a small tray for 12–15 minutes until blistered and juicy.
2. Make the whipped feta: In a food processor, blend feta, cream cheese, olive oil, lemon juice, garlic, and black pepper until silky smooth. Add a splash of water if needed.
3. Assemble: Spread whipped feta on a shallow plate or bowl. Top with warm roasted grapes, drizzle with extra olive oil, and sprinkle with thyme or nuts.
