For the chicken: • 2 boneless skinless chicken thighs or breasts • ½ cup buttermilk • ½ tsp salt + ½ tsp garlic powder • ½ cup all-purpose flour • ½ cup panko breadcrumbs • Oil for frying
For the buffalo sauce: • ¼ cup hot sauce (e.g., Frank’s RedHot) • 2 tbsp melted butter • ½ tsp honey
For the slaw: • 1 cup shredded cabbage • ¼ cup crumbled blue cheese • 2 tbsp mayo • 1 tbsp apple cider vinegar • Salt & black pepper
To assemble: • 2 brioche buns, toasted • Pickles (optional) • Extra blue cheese crumbles

Fry at 350°F (175°C) until golden and cooked through (about 4–5 min per side). 3. Make buffalo sauce: Mix hot sauce, melted butter, and honey. Toss fried chicken in sauce until coated. 4. Make slaw: Mix all slaw ingredients in a bowl. Taste and adjust seasoning. 5. Assemble sandwich: Bottom bun, slaw, buffalo chicken, pickles (if using), more blue cheese, top bun.
