Ingredients (serves 4):
For the skewers: • 1 ½ lbs (680g) boneless chicken thighs or breasts, cut into 1.5-inch pieces • 1 cup fresh pineapple chunks • 1 red bell pepper, cut into squares • 1 red onion, cut into chunks • Wooden or metal skewers
For the marinade/sauce: • ¾ cup BBQ sauce • ½ cup pineapple juice • 2 tbsp soy sauce • 1 tbsp honey or brown sugar • 2 garlic cloves, minced • ½ tsp smoked paprika • Pinch of chili flakes (optional)

Instructions: 1. Marinate: In a bowl, whisk BBQ sauce, pineapple juice, soy sauce, honey, garlic, paprika, and chili flakes. Toss chicken in the marinade. Cover and refrigerate at least 1 hour (up to overnight). 2. Assemble skewers: Thread chicken, pineapple, peppers, and onion onto skewers, alternating ingredients. 3. Grill or roast: • Grill: Preheat grill to medium-high. Cook skewers 10–12 minutes, turning and basting with reserved marinade until charred and cooked through. • Oven: Roast at 425°F (220°C) for 18–20 minutes, flipping and brushing with sauce halfway. 4. Serve: Drizzle with extra sauce and sprinkle with scallions or sesame seeds if desired.
