Traditional Coconut Ice 🥥🍬
A true British classic, Coconut Ice is the definition of nostalgic sweet-making. With its pretty two-tone stripes, chewy texture, and creamy coconut flavour, it’s often found at village fetes, Christmas tables, and childhood sweet stalls. Simple to make and even easier to enjoy, it’s a colourful little treat that always brings joy.
Ingredients
Desiccated coconut: 300g
Icing sugar: 300g
Unsalted butter: 75g, softened
Sweetened condensed milk: 200g
Vanilla extract: 1 tsp
Pink food colouring: a few drops (optional)
Method
In a bowl, mix the desiccated coconut with the icing sugar.
In a saucepan, gently melt the butter with the condensed milk until smooth and combined.
Pour the buttery mixture into the coconut mixture and stir until everything is evenly combined.
Divide in half. Add a touch of pink food colouring to one half and mix until well blended.
Line an 8x8-inch square tin with baking parchment. Firmly press the white mixture into the base, smoothing flat. Layer the pink mixture on top, pressing down evenly.
Chill in the fridge for around 2 hours until set firm.
Once set, cut cleanly into neat little squares or bars.

Tips
For even firmer squares, dust a little icing sugar on the knife before cutting.
