Cheese and Onion Pie 🧀🧅
Cheese and onion pie is a comforting, hearty classic in British cuisine. With a rich, cheesy filling and sweet, caramelised onions encased in buttery pastry, it’s perfect for a cosy dinner or a tasty lunch.
Ingredients:
Onions: 600g, finely chopped
Butter: 50g
Mature cheddar cheese: 200g, grated
Whole milk: 100ml
White bread (for breadcrumbs): 2 slices
Fresh parsley: 1 tablespoon, chopped
Salt: 1/2 teaspoon
Ground black pepper: 1/4 teaspoon
Ready-made shortcrust pastry: 500g (for base and top)
🍴 Olive oil: 1 tablespoon (for cooking the onions)
Method:
Cook the onions: Heat the olive oil and butter in a large frying pan over medium heat. Add the onions and sauté for 10-15 minutes, stirring occasionally, until they are soft and golden. Season with salt and pepper, then remove from heat and allow to cool slightly.
Prepare the breadcrumbs: While the onions are cooling, toast the bread slices until golden and then blitz them in a food processor until you have fine breadcrumbs.
Make the filling: In a bowl, combine the grated cheese, milk, parsley, and breadcrumbs. Add the sautéed onions and mix everything together until well combined. Taste and adjust seasoning if needed.
Assemble the pie: Roll out the shortcrust pastry on a floured surface. Line a pie dish (approximately 20cm in diameter) with one sheet of pastry, pressing down around the edges. Fill with the cheese and onion mixture, spreading it evenly.
Top the pie: Roll out the second sheet of pastry and place it over the filling. Pinch the edges of the top and bottom pastry together to seal. Make a small slit in the centre to allow steam to escape during baking.
Bake the pie: Preheat the oven to 180°C (fan)/200°C (gas mark 6). Pop the pie into the oven and bake for 25-30 minutes, or until the pastry is golden brown and crisp.
Serve: Let the pie cool for a few minutes before slicing. Serve with a side of peas or a fresh salad.
