๐ Motichoor Ladoo Recipe
Ingredients
1 cup besan (gram flour)
1/2 cup sugar
1/2 cup water
1/4 tsp cardamom powder
A pinch of saffron (optional)
Ghee (for frying)
Silver leaf & sliced cashew (for garnish)

Method
1. Prepare the Besan Batter
In a bowl, mix besan with water to form a smooth, thin batter (like dosa batter).
Ensure no lumps.
2. Fry the Boondis
Heat ghee in a kadhai.
Use a perforated ladle (boondi jhara). Pour batter over it and tap so small droplets fall into the ghee.
Fry on medium heat until just cooked (donโt make them crisp).
Drain on tissue. Repeat till batter is finished.
3. Make Sugar Syrup
Heat 1/2 cup sugar and 1/2 cup water until it forms a 1-string consistency.
Add saffron and cardamom powder. Mix well.
4. Mix Boondis with Syrup
Add the fried boondis to the warm syrup.
Stir and cover. Let rest for 10 minutes so they soak.
5. Shape the Ladoos
Once warm enough to handle, grease palms with ghee.
Take portions and press into round ladoos.
Garnish with silver leaf and sliced cashews.
