Sichuan Crispy Pork
Ingredients:
* 1 lb pork tenderloin strips
* 1 tbsp Sichuan peppercorns
* 1 tsp salt
* A pinch of black pepper
* 2 tbsp Chinese cooking wine
* 1 tbsp oyster sauce
* 2 eggs
* 1 cup flour
* 2 cups cornstarch
* Oil for frying
* Chili powder, cumin, pepper, and salt for sprinkling
Instructions:
1. Combine pork strips, Sichuan peppercorns, salt, black pepper, Chinese cooking wine, and oyster sauce in a bowl. Marinate for 20 minutes.
2. In a separate bowl, mix eggs, flour, and cornstarch in a 1:2 ratio.
3. Pour the egg mixture over the marinated pork and mix well to coat.
4. Heat oil in a deep fryer or large pot to 70% of its maximum temperature.
5. Fry the pork strips until golden brown. Remove and drain on paper towels.
6. For extra crispiness, fry the pork strips a second time until they are deeply golden and crispy.
7. After serving, sprinkle with chili powder, cumin, pepper, and salt to taste.
