    Golden puff pastry layered with deeply caramelized onions and melted brie. Uneven edges, cheese escaping in spots, and buttery flakes everywhere. It’s elegant enough for guests, but messy enough to feel homemade.



    📝 Ingredients (makes 12 squares):
    • 1 sheet puff pastry, thawed
    • 1 wheel or wedge of brie, sliced into small pieces
    • 2 medium onions, thinly sliced
    • 1 tbsp butter
    • 1 tbsp olive oil
    • 1 tsp brown sugar
    • 1 tsp balsamic vinegar
    • Salt & pepper to taste



    🔥 Instructions:
    1. Caramelize the onions:
    In a skillet, heat butter and oil over medium-low. Add onions, salt, and sugar. Cook slowly ~20 min until golden and soft. Stir in balsamic, cook 2 min more.
    2. Prep the pastry:
    Cut puff pastry into roughly even squares (perfection not required). Place on parchment-lined tray.
    3. Assemble:
    Top each square with a spoonful of onions and a piece of brie. Sprinkle pepper.
    4. Bake rustic:
    Bake at 400°F (200°C) for 15–18 min until puffed and golden, with cheese bubbling over.
    5. Serve hot:
    Let flakes fall, serve straight from the tray. No garnish — the mess is part of the charm.
