Ingredients (Serves 2–3): • 2 white fish fillets (cod, halibut, or haddock) • Salt & pepper • 2 tbsp olive oil • ½ cup fresh breadcrumbs • 2 tbsp fresh parsley, chopped • 1 tbsp fresh dill, chopped • 1 garlic clove, minced • Zest of 1 lemon
For the sauce: • 3 tbsp unsalted butter • 1 tbsp capers, drained • Juice of ½ lemon • 1 tsp Dijon mustard
Instructions: 1. Preheat oven to 375°F (190°C). 2. Mix breadcrumbs, parsley, dill, garlic, lemon zest, salt, and pepper. Press mixture onto the fish. 3. Heat oil in an ovenproof skillet, sear fish 2 min per side. 4. Transfer skillet to oven, bake 6–8 min until fish flakes easily. 5. For the sauce, melt butter, stir in capers, lemon juice, and mustard. Pour over fish before serving.
