Ingredients (Serves 2–3): • 2 duck breasts, skin on • Salt & black pepper • 1 tsp smoked paprika
For the glaze: • ½ cup fresh or frozen blackberries • 2 tbsp honey • 1 tbsp apple cider vinegar • 1 tbsp chipotle in adobo sauce (minced) • ¼ cup BBQ sauce (smoky style)
Instructions: 1. Score duck skin in a crisscross pattern without cutting into the meat. Season with salt, pepper, and smoked paprika. 2. Place duck breasts skin-side down in a cold skillet. Heat slowly to render fat, cooking until skin is crispy (about 6–8 min). Flip and cook 3–5 min more until medium-rare or desired doneness. Rest 5 min. 3. For glaze, simmer blackberries, honey, vinegar, chipotle, and BBQ sauce in a small pan until berries break down and sauce thickens (about 5 min). 4. Slice duck and spoon glaze generously over the top.
