Ingredients (Serves 2–3): • 8 oz (225g) tagliatelle pasta • 2 tbsp butter • 1 tbsp olive oil • 2 cloves garlic, minced • 8 oz (225g) mixed mushrooms, sliced • ½ cup heavy cream • ¼ cup grated Parmesan cheese • 1 tsp truffle oil (or more to taste) • Salt & black pepper • Fresh parsley, chopped (optional)
Instructions: 1. Cook pasta in salted boiling water until al dente. Reserve ½ cup pasta water. 2. In a skillet, heat butter and olive oil. Sauté garlic for 1 min, add mushrooms, cook until golden. 3. Pour in cream, Parmesan, and a splash of pasta water. Simmer until slightly thickened. 4. Toss in pasta, add truffle oil, season with salt and pepper. 5. Serve immediately, sprinkle parsley if desired.
