Ingredients (Serves 8): • 1 ½ cups all-purpose flour • 1 tsp baking powder • ¼ tsp salt • ½ cup unsalted butter, softened • ¾ cup sugar • 2 large eggs • 1 tsp vanilla extract • ½ cup sour cream or plain yogurt • 1 cup fresh strawberries, halved • ¼ cup sliced almonds • 1 tbsp coarse sugar (optional)
Instructions: 1. Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan. 2. In a bowl, whisk flour, baking powder, and salt. 3. In another bowl, cream butter and sugar until light. Beat in eggs one at a time, then vanilla. 4. Mix in sour cream, then fold in dry ingredients until just combined. 5. Spread batter in pan, top with strawberries and almonds, sprinkle with coarse sugar if using. 6. Bake 40–45 min until golden and a toothpick comes out clean.
