Ingredients (Makes ~16 cookies): • ½ cup (115g) unsalted butter • ½ cup (100g) brown sugar • ¼ cup (50g) granulated sugar • 1 large egg • 1 tsp vanilla extract • 1 ¼ cups (155g) all-purpose flour • ½ tsp baking soda • ½ tsp ground cardamom • ¼ tsp salt • ½ cup shelled pistachios, roughly chopped
Instructions: 1. Melt butter in a saucepan over medium heat until golden brown and nutty in aroma. Cool slightly. 2. In a bowl, mix browned butter, sugars, egg, and vanilla until smooth. 3. Add flour, baking soda, cardamom, and salt. Stir until just combined. 4. Fold in pistachios. Scoop dough into rough balls and chill for 30 min. 5. Bake at 350°F (175°C) for 10–12 min until edges are golden but centers still soft.
