Ingredients (Serves 3–4): • 1 cup basmati rice, rinsed • 1 cup coconut milk • 1 cup chicken stock • ½ tsp turmeric • ½ tsp ground cumin • ½ tsp salt • ½ cup cashews, toasted • ¼ cup raisins or golden sultanas • 2 tbsp fresh cilantro, chopped
For the chicken: • 2 chicken breasts, cut into cubes • 1 tbsp olive oil • 1 tsp curry powder • Salt & pepper
Instructions: 1. Heat oil in a skillet, season chicken with curry powder, salt, and pepper. Cook until golden and cooked through. 2. In a saucepan, combine rice, coconut milk, stock, turmeric, cumin, and salt. Bring to a boil, reduce to low, cover, and cook until rice is tender (~15 min). 3. Stir in cashews, raisins, and cilantro. 4. Serve rice topped with chicken cubes.
