Ingredients (Serves 8): • 1 ½ cups all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ½ tsp salt • 1 tsp cinnamon • ½ tsp nutmeg • ½ cup unsalted butter, softened • ¾ cup brown sugar • 2 large eggs • 1 tsp vanilla extract • ½ cup sour cream or plain yogurt • 2 ripe pears, peeled and diced • ½ cup walnuts, chopped
Instructions: 1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan. 2. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg. 3. In another bowl, cream butter and brown sugar. Beat in eggs one at a time, then vanilla. 4. Add dry ingredients alternating with sour cream, mixing gently. Fold in pears and walnuts. 5. Pour into pan and bake 40–45 min until golden and a toothpick comes out clean. Cool before slicing.
