Ingredients (Makes 10–12 rolls): • 1 tbsp olive oil • 1 small onion, finely chopped • 2 cloves garlic, minced • ½ lb (225g) ground lamb • 1 tsp ground cumin • 1 tsp smoked paprika • ½ tsp cinnamon • Salt & black pepper to taste • ½ cup crumbled feta cheese • 2 tbsp fresh parsley, chopped • 6 sheets phyllo pastry • 3 tbsp melted butter or olive oil (for brushing)
Instructions: 1. Preheat oven to 375°F (190°C). Line a baking tray. 2. Heat oil in a skillet, sauté onion and garlic. Add lamb, cook until browned. 3. Stir in cumin, paprika, cinnamon, salt, and pepper. Remove from heat. Mix in feta and parsley. 4. Cut phyllo sheets into halves. Place filling along one edge, roll tightly, brush with butter/oil. 5. Arrange rolls on tray, brush tops, and bake 18–20 min until golden and crisp.
