Fluffy Pancakes Recipe
Ingredients:
2 cups (250 g) all-purpose flour
2 tbsp (25 g) sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 large eggs
1 ½ cups (360 ml) milk
¼ cup (60 g) melted butter or vegetable oil
1 tsp vanilla extract
Instructions:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
Pour wet ingredients into the dry ingredients and gently mix until just combined.
Do not overmix; the batter should be slightly lumpy.
Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil.
Pour about ¼ cup of batter for each pancake.
Cook until bubbles form on the surface and the edges look set, then flip and cook the other side until golden brown.
Serve warm with honey, syrup, butter, or fruits.
