Mint Chocolate Chip Snowball Cookies
Ingredients:
1 cup unsalted butter, softened
⅔ cup powdered sugar, sifted
2 ¼ cups all-purpose flour, spooned and leveled
½ teaspoon salt
1 teaspoon mint extract or peppermint extract
Green food coloring (gel works best)
¾ cup mini chocolate chips
Additional powdered sugar for coating
Directions:
Prepare the Baking Sheet:
1.1. Line a large cookie sheet with parchment paper and set it aside.
Make the Dough:
2.1. In a mixing bowl, beat the softened butter and powdered sugar together until the mixture is light and fluffy.
2.2. Add the flour, salt, and mint extract, mixing just until everything is combined.
2.3. Add a few drops of green food coloring until you reach your desired shade.
2.4. Stir in the mini chocolate chips.
Shape the Cookies:
3.1. Scoop out one tablespoon of dough and roll it into a ball.
3.2. Place the balls on the prepared cookie sheet.
Chill the Dough:
4.1. Cover the cookie dough and refrigerate it for at least 30 minutes.
Preheat the Oven:
5.1. Preheat your oven to 375°F (190°C).
Bake the Cookies:
6.1. Bake the cookies for 7 to 8 minutes. They should be very lightly browned on the bottom.
6.2. Let the cookies cool on the sheet for 5 minutes.
Coat the Cookies:
7.1. Line another large baking sheet with parchment paper and dust it generously with powdered sugar.
7.2. Transfer the slightly cooled cookies to this baking sheet and dust them with powdered sugar.
Cool Completely:
8.1. Allow the cookies to cool completely.
Final Coating:
9.1. Fill a small bowl halfway with powdered sugar.
9.2. Drop each cookie into the bowl one at a time, turning until they are fully coated in powdered sugar.
Storage:
10.1. Store any leftover cookies in an airtight container for up to four days.
