Quick French Onion Chicken Pie

Ingredients:

1 tablespoon olive oil
2 large onions, thinly sliced
2 cloves garlic, minced
1 pound cooked chicken, shredded
1/2 cup chicken broth
1 teaspoon dried thyme
Salt and pepper to taste
1 sheet puff pastry, thawed
1 cup shredded Gruyère cheese
1 egg, beaten (for egg wash)
Instructions:

Preheat oven to 400°F (200°C).
Heat olive oil in a large skillet over medium heat. Add onions and cook, stirring occasionally, until caramelized, about 20-30 minutes.
Add minced garlic and cook for 1 minute .
Stir in shredded chicken, chicken broth, and thyme. Season with salt and pepper. Simmer for 5 minutes, allowing the liquid to reduce slightly.
Line a pie dish or oven safe baking dish with the puff pastry.
Pour the chicken and onion mixture into the pastry-lined dish.
Sprinkle Gruyère cheese over the top.
Brush the edges of the puff pastry with the beaten egg.
Bake for 20-25 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.
Let it cool slightly before serving.
