🌮 Baked Spinach Mushroom Quesadillas

Ingredients:

4 large flour tortillas

2 tbsp olive oil (divided)

2 cups fresh spinach (roughly chopped)

1 cup mushrooms (sliced)

1 small onion (finely chopped)

2 cloves garlic (minced)

1 ½ cups shredded mozzarella cheese (or a mix of mozzarella & cheddar)

½ tsp paprika

½ tsp black pepper

½ tsp salt

2 tbsp fresh parsley (chopped, for garnish)

Instructions:

1. Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Cook the Vegetables

Heat 1 tbsp olive oil in a skillet over medium heat.

Add onions and garlic, sauté until fragrant.

Stir in mushrooms and cook until softened (about 5 minutes).

Add spinach, cook until just wilted. Season with salt, pepper, and paprika. Remove from heat.

3. Assemble Quesadillas

Place a tortilla on a flat surface.

Spread a layer of cheese on half, then top with the spinach-mushroom mixture.

Add another sprinkle of cheese, then fold the tortilla in half.

Repeat with remaining tortillas.

4. Bake

Arrange quesadillas on the prepared baking sheet.

Brush lightly with olive oil on top for crispiness.

Bake for 12–15 minutes, flipping halfway, until golden brown and the cheese is melted.

5. Serve

Cut into wedges, garnish with fresh parsley.

Serve warm with salsa, sour cream, or guacamole.
