Ingredients (1 medium loaf) • 3 ¼ cups (400 g) bread flour • 1 ½ tsp fine sea salt • 1 cup + 2 Tbsp (275 g) warm water • ¼ tsp instant yeast • 1 Tbsp olive oil • 1 head garlic, top trimmed • 1 Tbsp fresh rosemary, chopped
Method — Insta-quick version 1️⃣ Roast garlic 40 min @ 375 °F (190 °C) until soft; cool & squeeze out cloves. 2️⃣ Stir flour, salt, yeast, water, olive oil & roasted garlic into shaggy dough; cover, rest 12 h. 3️⃣ Fold in rosemary, shape into ball; proof 60 min on parchment. 4️⃣ Dutch-oven pre-heated to 475 °F (245 °C): bake 30 min covered + 15 min uncovered.
