Ingredients: • 2 ripe but firm avocados • 1/2 cup all-purpose flour • 2 eggs, beaten • 1 cup panko breadcrumbs • 1/2 tsp garlic powder • 1/2 tsp smoked paprika • Salt and pepper to taste • Oil for frying • Optional: lime wedges and chipotle mayo for serving
Instructions: 1. Slice avocados into thick wedges. 2. In three separate bowls, place flour, beaten eggs, and panko mixed with garlic powder, paprika, salt, and pepper. 3. Coat each wedge in flour, then egg, then panko. 4. Heat oil to 350°F (175°C) in a deep pan. 5. Fry wedges until golden and crispy (about 2–3 minutes). Drain on paper towels. 6. Serve hot with your favorite dipping sauce or lime wedges.
