Vanilla Cake
Ingredients
* 2 1/4 cups all-purpose flour
* 1 1/2 cups granulated sugar
* 2 tsp baking powder
* 1/2 tsp salt
* 1 cup unsalted butter, softened
* 4 large eggs
* 1 tbsp vanilla extract
* 1 cup milk
Instructions
* Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
* In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt.
* Add the softened butter and mix on low speed until the mixture resembles coarse crumbs.
* In a separate bowl, whisk the eggs, vanilla extract, and milk.
* Gradually add the wet mixture to the dry ingredients, mixing on medium speed until the batter is smooth. Do not overmix.
* Divide the batter evenly between the two prepared pans.
* Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
* Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Chocolate Buttercream Frosting
Ingredients
* 1 cup unsalted butter, softened
* 2 cups powdered sugar
* 1/2 cup unsweetened cocoa powder
* 1/4 cup milk
* 1 tsp vanilla extract
Instructions
* In a large bowl, beat the softened butter until it is creamy and smooth.
* Sift in the powdered sugar and cocoa powder. Mix on low speed until combined.
* Add the milk and vanilla extract. Beat on medium-high speed for 3-5 minutes, until the frosting is light and fluffy.
* Once the cakes are completely cool, assemble and frost.
