Cinnamon Sweet Alabama Pecan Bread
Ingredients
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs (room temperature)
2 cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
1 cup sour cream (or buttermilk)
2 tsp vanilla extract
1 ½ cups chopped pecans (toasted for extra flavor)
Optional Topping:
¼ cup granulated sugar + 1 tsp cinnamon (for sprinkling on top)
Instructions
1. Prepare the Batter:
Preheat oven to 350°F (175°C). Grease and flour two 8x4-inch loaf pans (or one 9x5-inch).
In a large mixing bowl, cream butter and sugar until light and fluffy (about 4–5 minutes).
Add eggs one at a time, beating well after each.
In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
Add dry ingredients alternately with sour cream, beginning and ending with flour. Mix just until combined.
Stir in vanilla and fold in chopped pecans.
2. Bake the Bread:
Divide batter evenly between prepared pans.
If desired, sprinkle cinnamon-sugar mixture evenly over the tops for a sweet crust.
Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
