Using the new @bartingredients spice pastes (gifted)
Ingredients: • 200g pasta shells (or any short pasta) • 250g beef mince • 1 red pepper, diced • 1 small red onion, finely chopped • 2 cloves garlic, minced • 2 tbsp Bart Chipotle & Red Pepper Paste • 1 tbsp tomato purée • 200ml passata • 1 tsp smoked paprika • ½ tsp chilli flakes (optional) • Olive oil • Salt & pepper, to taste • Fresh parsley or coriander, chopped (for garnish) • Fresh chilli slices (optional)
Method: Cook the pasta in salted boiling water until al dente. Drain, reserving a little pasta water. Meanwhile, heat a drizzle of olive oil in a pan. Add the onion and cook for 3–4 mins until softened. Add garlic and red pepper, cooking for another 2–3 mins. Add beef mince and cook until browned. Stir in the Bart Chipotle & Red Pepper Paste, tomato purée, paprika and chilli flakes. Cook for 2 mins to release the flavour. Pour in the passata and a splash of pasta water. Simmer for 8–10 mins until thickened. Toss the cooked pasta into the sauce and season to taste. Serve topped with fresh herbs and chilli slices
