Low-Sugar Vanilla Almond Cookies (Diabetic-Friendly)
Ingredients:
8 oz unsalted butter, softened
1/3 cup erythritol or monk fruit sweetener (granulated)
1/4 tsp salt
1 1/2 tsp pure vanilla extract
1 large egg yolk
1 3/4 cups almond flour (or a mix of 1 cup almond + 3/4 cup whole wheat flour for texture)
Instructions:
Preheat oven to 350°F (175°C).
Cream butter and sweetener until light and fluffy.
Add egg yolk, vanilla, and salt; mix well.
Stir in flour until a soft dough forms.
Roll into small balls and flatten slightly on a lined baking sheet.
Bake 10–12 minutes until edges are lightly golden. Cool completely.
