- ½ cup powdered sugar
- 1 large egg yolk
- 1 tsp vanilla extract

Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the egg yolk, vanilla extract, and salt, mixing until well combined. Gradually incorporate the flour, mixing until a soft dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Using your thumb or the back of a teaspoon, make an indentation in the center of each ball.
Bake the cookies for 10–12 minutes, or until the edges are lightly golden. Remove from the oven and allow them to cool slightly. Once cooled, fill each indentation with about ½ teaspoon of lemon curd. Let the cookies set before serving. For an extra touch, dust with powdered sugar if desired.
