Golden Vegan Potato Terrine with Caramelized Onions and Sprouts

    Ingredients
    • 1.5kg floury potatoes, thinly sliced
    • 3 tbsp olive oil + extra for brushing
    • 2 onions, thinly sliced
    • 2 garlic cloves, minced
    • 1 tsp thyme leaves
    • 200ml oat cream or vegan mayo (for topping + layering)
    • 1 tbsp vegan butter
    • 2 tbsp nutritional yeast
    • Salt & black pepper
    • Handful of mixed sprouts (radish, sunflower, pea shoots)
    • Optional: crispy fried onions or toasted seeds

    Method
    1. Preheat oven to 180°C. Grease and line a loaf tin with baking paper.
    2. Slowly cook onions in 1 tbsp oil over low heat 25 mins until deep golden and jammy. Season and set aside.
    3. Toss sliced potatoes with garlic, thyme, nutritional yeast, salt, pepper, and remaining oil.
    4. Layer potatoes tightly in tin, overlapping edges. Press firmly to compact. After every 2–3 layers, brush lightly with oat cream. Repeat until tin is full.
    5. Cover with foil and bake 60 mins until tender. Remove foil, brush top with vegan butter, and bake 25 mins until golden and crisp.
    6. Cool 10 mins, then carefully invert onto a board. Slice thickly with a sharp knife to show the layers.
    7. Top each slice with caramelised onions, a drizzle of vegan mayo or cream, crispy onions or seeds, and fresh sprouts. Serve warm.
