It’s a Friday Fakeaway and if there’s one thing I like more than Tofu Tikka Masala, it has to be double tofu - chunks of crispy, flavourful tofu in a creamy tofu curry sauce. Double the tofu and the double gains 👌💯💪😍
Cucumber , tomato & red onion salad 1/4 cucumber, finely chopped 1 red onion, finely diced 100g cherry/baby plum tomatoes, quartered 1/2 lime juiced Pinch of salt 1/2 bunch coriander, chopped
Method- curry - tear the block of tofu into bite sized pieces, coat with 2 tspn of the garam masala and some spray oil and roast in the oven until crispy - Meanwhile, gently fry the onion in a deep bottomed pan until softened - Add the garlic and gently fry for a few more minutes - Add the spices, stirring to combine and cook for another 3-4 minutes before adding the chopped tomatoes and water - Stir to combine and simmer gently for 10 minutes - Add the carton of silken tofu to a blender with the nutritional yeast and bouillon, blend until smooth - Pour into the curry sauce and stir through, followed by the roasted tofu
Cucumber, red onion & tomato Salad - method - add all the prepared ingredients to a bowl and stir to combine
Serve the curry with steamed basmati rice, the salad, mango chutney and mini or maxi poppadom - don’t forget an extra flurry of coriander, red chilli flakes and a few nigella seeds 🙌😍
