Spicy Thai Red Curry Tofu Delight
TOFU THAI RED CURRY ๐
Thereโs nothing like starting the weekend with a tasty bowl of deliciousness and hopefully this tofu Thai red curry and will hit the spot ๐๐ฏ๐
Ingredients
Served 4
1 block @tofoo cubed
1 white onion, finely diced
2 cloves garlic, crushed
1 tspn lemon grass paste
2 tbspn Thai red curry paste - @bluedragonuk
1 can coconut milk - @coconutmerchant
200ml vegetable stock
2-3 spring onions, finely sliced
Red chillis, finely sliced
Sesame seeds
Method
- pan fry the tofu until crispy and set aside on a plate
- stir fry the onion, peppers and courgettes in a large pan until coloured and slightly softened
- Add the garlic, lemongrass paste and stir through before adding the curry paste
- add the coconut milk, followed by the stock and continue to cook on a medium heat for around 5-8 minutes
- return the tofu to the pan, heat for a couple of minutes before dividing between 4 bowls, serving with rice and adding the toppings)
