    Ingredients

    For the Aloo Tikki:
    • 3 medium potatoes, boiled & mashed
    • ½ cup cooked peas
    • 1 small onion, finely chopped
    • 2 green chillies, minced
    • 2 tbsp fresh coriander, chopped
    • 1 tsp grated ginger
    • 1 tsp cumin seeds
    • 1 tsp garam masala
    • ½ tsp turmeric
    • ½ tsp chilli powder
    • 2 tbsp gram flour (for binding)
    • Salt, to taste
    • 2 tbsp vegetable oil (for shallow frying)

    For the Couscous:
    • 1 cup couscous
    • 1 cup boiling vegetable stock
    • 1 cucumber, diced
    • 1 red pepper, thinly sliced
    • 1 yellow pepper, diced
    • 1 cup cherry tomatoes, halved
    • 2 tbsp fresh coriander, chopped
    • ½ tsp cumin powder
    • ½ tsp smoked paprika
    • Juice of 1 lemon
    • 1 tbsp olive oil
    • Salt & pepper

    For the Salad:
    • 2 cups mixed leafy greens (rocket, spinach, baby lettuce)
    • ½ red onion, thinly sliced
    • 1 red chilli, thinly sliced (optional, for heat)

    For the Creamy Dip:
    • ½ cup vegan yogurt
    • 2 tbsp tahini
    • 1 tsp lemon juice
    • ½ tsp smoked paprika
    • Pinch of salt

    Method
    1. In a bowl, mix potatoes, peas, onion, chillies, coriander, ginger, spices, gram flour, and salt. Shape into patties.
    2. Heat oil in a pan and fry patties until crisp and golden on both sides.
    3. Place couscous in a bowl, pour over boiling stock, cover, and leave 5 mins. Fluff with a fork, then stir in cucumber, peppers, tomatoes, coriander, cumin, paprika, lemon juice, olive oil, salt and pepper.
    4. Toss mixed greens, onion, and chilli together, then fold through the couscous salad.
    5. Mix yogurt, tahini, lemon, paprika, and salt into a creamy dip.
    6. Serve patties warm alongside couscous salad and dip for a fresh, vibrant meal.
