    Serves 4

    Ingredients
    • 1 cup red lentils (masoor dal), rinsed
    • 1 tbsp vegetable oil
    • 1 tsp cumin seeds
    • 1 onion, finely chopped
    • 3 garlic cloves, minced
    • 1-inch ginger, grated
    • 2 tomatoes, chopped
    • 1–2 green chillies, slit
    • 1 tsp turmeric
    • 1 tsp ground coriander
    • 1 tsp garam masala
    • ½ tsp red chilli powder
    • 3 cups water (adjust as needed)
    • Salt, to taste
    • Fresh coriander, chopped, to garnish

    Method
    1. Heat oil in a pot, add cumin seeds and let them sizzle until fragrant.
    2. Stir in onion and cook until golden and soft.
    3. Add garlic and ginger, sauté until the raw smell fades.
    4. Mix in tomatoes and chillies, cook until tomatoes break down and oil starts to release.
    5. Add turmeric, coriander, garam masala and chilli powder, stirring to coat.
    6. Tip in lentils and water, bring to a boil, then simmer 20–25 mins until lentils are soft and creamy.
    7. Season with salt and adjust consistency with water if needed.
    8. Finish with coriander and serve hot with rice or naan.
