Spicy Harissa Gnocchi with Creamy Hummus Delight

  • HARISSA GNOCCHI TRAYBAKE 💚

    If there’s one thing I love, it’s a simple, easy and tasty recipe. This Harissa Gnocchi Traybake on homemade hummus ticks all the boxes and is an an absolute stunner. It’s one of those recipes we make on repeat and if you don’t want to make hummus, shop bought obvs saves you the hassle👌💯😍

    Deets:

    1 pack gnocchi
    2 courgettes, chopped
    2 red peppers, chopped
    2 red onions, chopped
    2 tbsps harissa paste

    Hummus
    1 tin chickpeas, drained and rinsed
    1 garlic clove, sliced
    1 tbspn tahini
    1 lemon, juiced
    Salt to season

    To make the gnocchi traybake
    - Add everything to a baking tray and mix it all together to coat with the harissa paste
    - Bake in the oven at 180* for 30 minutes

    To make the hummus
    - add everything to a blender/food processor and blend until smooth
    - Add a little more tahini or chickpea water if you need to loosen it a little

    - Add a couple of tablespoons of the hummus to your serving plate and top with the roasted traybake
    - Scatter a few chilli flakes on top and enjoy ☺️
