RED PESTO PASTA SALAD 💚

This super quick, healthy and delicious pasta salad is so simple to put together and will easily keep in the fridge for a few days - perfect as part of your weekly meal prep 👌💯😍

Recipe - serves 4 easily
Pasta salad
300g cooked pasta
1 yellow pepper, diced
200g cherry tomatoes, halved
1 tin butter beans, drained and rinsed
2 handfuls rocket
30g pine nuts

Pesto
3-4 roasted red peppers from a jar
3-4 sundried tomatoes from a jar
2 garlic cloves, sliced
3 tbspn @marigoldhealthfoods nutritional yeast
1 lemon, juiced
30g cashews
Salt to season

Method
- add all the salad ingredients to a serving dish
- Blend all of the pesto ingredients together before adding it to the salad and mixing it all together
- Enjoy ☺️
