Method 1. Cook noodles according to packet instructions, drain, and set aside. 2. In a small bowl, whisk together all sauce ingredients until smooth. 3. Heat vegetable oil in a pan over medium-high heat. Add tofu cubes and cook until golden and crispy on all sides, about 8–10 mins. Remove and set aside. 4. In the same pan, add onion, peppers, and white parts of spring onions. Stir-fry for 4–5 mins until slightly softened but still crisp. 5. Return tofu to the pan, pour over sauce, and toss until everything is coated in the sticky glaze. 6. Add noodles, tossing well so they absorb the sauce and veggies are evenly distributed. 7. Plate up, scatter sesame seeds, spring onion greens, and coriander. Serve hot.
