For the peach filling: • 5–6 ripe peaches, peeled and sliced • ½ cup brown sugar • 2 tbsp cornstarch • 1 tbsp lemon juice • ½ tsp cinnamon • Pinch of nutmeg • Pinch of salt

Prepare the filling: Toss peach slices with brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Let sit for 15–20 minutes. 3. Assemble: Roll out bottom crust and place in pie dish. Fill with peaches and juices. Top with second crust (lattice or full). Seal edges. Brush with egg wash and sprinkle raw sugar. 4.
