Garlic Butter Roasted Sweet Potatoes
Ingredients:
2 pounds sweet potatoes, peeled and cut into 1-inch thick rounds
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon smoked paprika
½ teaspoon dried thyme (or 1 teaspoon fresh thyme leaves)
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, finely chopped (for garnish)
Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with oil.
2. Place sweet potato rounds in a large bowl. Pour in melted butter, olive oil, garlic, smoked paprika, thyme, salt, and pepper. Toss until the sweet potatoes are evenly coated.
3. Arrange the rounds in a single layer on the prepared baking sheet.
4. Roast for 25–30 minutes, flipping halfway, until the sweet potatoes are golden-brown on the edges and tender in the center.
5. Remove from oven, sprinkle with fresh parsley, and serve warm.
